Daryl, 
I like to play hide and search with my dogs. I put them in a stay, then go hide and call them to come. 
You can also do buster cube which is a toy that dispenses treats when the dog rolls it.  
You can also put her tugging skills to work and teach her to do things like open doors or pull baskets.
