This is the same recipe I made today, and it's good, but I think the one
from GDB was a little different. I wonder if GDB would have it archived
somewhere if someone on the list, like maybe Mike, would know of someone
who'd look for it. I know it's quite a while ago, though.

This is a recipe I got from a mailing list I was on many years ago.  It is
not the one from GDB. You may also find Joe's Special in some coffee shops
in the West.


One-half  cup chopped onions  (optional)
1 clove garlic (optional)
2 teaspoons olive oil
 9 or 10-ounce package frozen spinach
1 pound ground beef
2 teaspoons Italian seasoning mix   (If you haven't tried it you buy it in
the store in the spice section it is also optional.
4 eggs


I usually get the spinach and eggs ready before I start browning the ground
beef.

Place the block of frozen spinach in a strainer. Let it thaw.  When it has
thawed, press the spinach through the strainer until all the water is gone.
I use Green Giant spinach but any brand will work. Be sure all the liquid is
our of the spinach. I have found it easier to cook this recipe with frozen
spinach.     
Crack 4 eggs, beat them together and set them aside.
If you want to use the onions and garlic, chop them up and brown them in the
olive oil.
After the onions and garlic have cooked a couple of minutes, add the ground
beef.  Brown it over medium heat for a couple of minutes stirring
frequently.
Add the Italian seasoning mix.  
Then add the frozen spinach. Stir for a couple of more minutes and then add
the eggs.    
Cook for a minute or so more or until the eggs are cooked and mixed in with
everything else.  
Remove from heat and serve.
