What you say sounds good -- however, having organized conferences, I 
have learned that audio/video, and other extras are like charging for 
checked bags for airlines.  They make money from it, usually give you 
a break on meeting room rental, because of hotel room rental, but get 
you with AV etc.

What y0u say sounds good, but probably isn't going to happen.  As is 
said "there is no free lunch."  Ultimately they will make their 
money, even if it is with restaurant food, AV, WiFi, etc.
