Michelle:

I've had better luck volunteering at the small nonprofit organizations. 
They're usually on a very tight budget and happy to get any help.  They're 
usually not quite as organized and formal, which is a good thing.

There may be some small animal rescue groups in your area.  Sometimes the 
local shelters have lists of other groups in the community.

You might even be able to do some things from home, like answering emails or 
returning phone calls.
