[AG-EQ] Mustard greens

I have lots of mustard greens.  Last night, I chopped up a handful and
stirred it into a casserole a few minutes before it was done, but they still
lost all their zippiness.  They're spicy raw, but it seems like the minute
they get hot, they lose all that.

Is there a trick to keeping them mustardy, but still cooking them a bit?

 

Jewel, I also am a big fan of 7 Little Words.
