[Jason] There is draft guidance on this page:
https://idpf.github.io/a11y-guidelines/content/mathml/desc.html
which also refers to sample EPUB content. The question of how best to treat mathematical content in EPUB documents is complicated by backward compatibility concerns that have inspired substantial discussion recently.
If you need an accessible content authoring solution capable of generating EPUB documents with MathML included, you should be able to use Pandoc. Write the document in Pandoc Markdown, then use Pandoc to convert it to EPUB 3. I haven't tested whether the MathML is properly generated in this scenario, so definitely test it carefully to ensure it meets your needs before you rely on it. Pandoc Markdown uses a subset of TeX mathematics, so anyone familiar with TeX or LaTeX should be comfortable writing it.
