Seems there is a newer edition whose title has had "and RStudio" added.
There is a lot of stuff out there done in R markdown by people using this book, and even some files available from the author.
I recommend that you run the R markdown files with the addition of library(BrailleR) added into an R chunk near the top. You'll get a lot more information about the graphs being generated that way.

Thank you for the recommendation on viewing the Epub using HTML. I realized that there are images with alt text of the problem number, like (6.2). The images have the problems inside.
I'm going to talk to my disability department and have them redo the book.
