For flowcharts i use the R package DiagrammeR. It has the advantage
that you can make flowcharts without needing to see, but it does
output the flowchart as an image that is not accessible (though i am
not aware of solutions to this that do not involve tactile displays).
My approach is to have the image as-is and to use extensive alt-text
for accessibility. I'd be keen to hear if anyone has better solutions.
If you Google DiagrammeR you will find several good examples of how to
use it.
Then, as i suspect others on the list will also advise you, i highly
recommend learning to use Rmarkdown. I find it extremely useful for
authoring documents that include things like code snippets and images.
