Dear Nikki,

When you elect to save something you have scanned, it will automatically be 
saved in your library, unless you select somewhere else.
In the library, there are some standard folders already there, but you can 
add and label new ones as you like, so you can file the documents you scan 
into logical file folders for safe keeping.
You can also convert document formats to other file types.
One caution: never stop the conversion process once started or it can wipe 
out drivers and cause other issues you will not like.  Let the process 
complete and then if you don't want it, delete it.
When you save, it usually ask you what folder you want to save it to and you 
can then arrow through the folders, navigate by letter and once on the 
folder, just hit enter there.
To find the document.  Go to the library by use of the alt key and then 
arrow to the library, then folder and finally to the document and hit enter. 
Use the same process to save the document back to its folder as you did to 
save it the first time.
You can change from the "read only" mode to the "edit mode" by toggling 
between them using the control-E command.   This will let you edit, cut and 
paste and even import the document into MS-Word and such.  Just don't forget 
to turn it off using the Control-E again.
Most times the documents are saved as a .arc file, but you can save them in 
other formats too and convert them.  Just use the alt key and arrow to the 
operation you want to do.  It is mostly "tree" menus.
Unless they have changed it, JAWS gets submerged when Open Book is activated 
and comes back on once you exit Open Book.
If you Alt-Tab when in Open Book, I think you will find JAWS is still there, 
but it is Open Book that is providing the voices and speaking rate when it 
is on.
There are also menu setting with in Open Book for contrast, resolution, 
colors and many other things that can improve the scanning process and 
document.  These menus work like a tree and have branches to them that you 
can go out on
