Blind people do any hand crafted projects you can think of, so the question
is not what a blind person can do, but what you like to do, then go after
that.
There is a Krafters Korner list on the nfbnet.org.

Subject: [BlindTlk] Learning Handicraft Skills
All,
Does anybody have any suggestions on what skills are the most feasible
to learn while blind that involve handicrafts? I'm thinking of working
with wood, metal etc, building, things like that. I know that the NFB
training centers teach some of this, but my family situation does not
make it feasible for me to go there. Are there any ways to learn these
on your own or work with a sighted person who can figure out ways to
teach the skills?
