How long did you cook it? If you started it at 6pm and left it until
morning, it should have cooked long enough. Maybe it shut off during the
night for some reason?
I think with crockpots things don't always brown the same as when they cook
on the stovetop, but if the eggs taste cooked and are firm, then it should
be fine.
