There's no reason you can't put the crockpot back on low for awhile after 
having it in the fridge if you don't like the texture of the hash browns. 
If you keep the lid on, the casserole won't dry out, since the food will 
generate its own moisture.  That's the nice thing about crockpots; they 
don't generate enough heat to overcook things, so you don't have to be too 
precise about times, and they won't dry out your food.  You have to try 
really hard to mess up a meal in a crockpot.  Just put it back on for a few 
hours, and it should be ready for dinner tonight.  Or leave it in the fridge 
and plug it in very late tonight or early in the morning if you want it for 
tomorrow's breakfast.

How long did you cook it? If you started it at 6pm and left it until
morning, it should have cooked long enough. Maybe it shut off during the
night for some reason?
I think with crockpots things don't always brown the same as when they cook
on the stovetop, but if the eggs taste cooked and are firm, then it should
be fine.
