Paul's question about the xylitol sweetener Ideal and the link to the idealsweet.com website got me to searching for more info on xylitol. Below you will find a couple of interesting links: one by Phil Kaplan and a second by Jimmy Smith, including many blogs.  As I said, I found them interesting, opinionated and informative.

One question I have, however, is about sugar alcohols.  Does anybody have info as to whether xylitol causes a delayed blood sugar spike?  This is one of the reasons I hesitate using any sugar alcohol sweeteners.
