Debbie:

That's a decent low-carb breakfast; I often get something similar when I'm
in a hotel that has only a Continental breakfast with a bazillion types of
pastries but which has boiled eggs.  I think I might eat two or three of the
boiled eggs, though.  I would hope that you get some fruit in during the
day.

This morning my breakfast consisted of a low-carb English muffin, a two-egg
omelet and half a grapefruit.  The only fly in the ointment insofar as some
diabetics are concerned was that the omelet had some pulled pork in it.

If nothing else, this emphasizes that there's no such thing as a true
"diabetic diet" and why current thinking is that newly-diagnosed diabetics
(or, for that matter, grizzled veterans) should work with a certified
diabetes educator and dietitian with diabetes experience to come up with a
meal plan that conforms to what works best for the particular individual and
also caters insofar as possible to said individual's likes and preferences
(I don't think there's a "chocolate éclair diet" that's low-carbb!).

Hi Steve, I am fairly new to this as well. To mix things up a bit, and still

make it quick, two boiled eggs and two slices of bacon or sausage with one 
piece of multi grain toast.
