These chicken tostadas are a delicious dish that won't break the bank. Save
time by buying a rotisserie chicken, which you can often find on sale at a
warehouse club.



   Prep time: 10 min

  Servings: 4 Servings

  Serving size: 1 tostada

Ingredients

US Metric



cooked chicken breast

(shredded)2 cup

*Sugar's Note: I buy the rotisserie Chicken from Cosco then shred it when I
get home.

What I don't use I put in a tauppaware container and reuse it in salads,
sandwiches or in wraps later.



Salsa of your choice

3 teaspoons

*Sugar's Note, I rarely use that much salsa. I like to just add about 1
teaspoon just to taste.



canned pinto beans

(rinsed and drained)1/2 cup

*Sugar's Note: Another option instead of pinto beans is black beans

cheddar cheese

(reduced-fat, shredded)4 tbsp



4 tostada shells

Sugar's Note: You can purchase the shells at your local market.



avocado

(mashed)1/2



lettuce

(shredded)1 cup

Directions

1. Preheat the oven to 400 degrees F.

2. In a small bowl, mix together the chicken, salsa, and pinto beans.

3. Place the tostada shells on a baking sheet. Top each tostada shell with
1/2 cup chicken-bean mixture and 1 Tbsp. cheese.

4.  Bake for 5 minutes or until the cheese is melted.

5. Remove the tostadas from the oven and top each tostada with a spoonful of
mashed avocado and 1/4 cup lettuce.



Sugar's Note:

You can also just layer the toppings before then place in your oven or your
microwave.

You just need the cheese to melt a little and the beans to get warm.

You can do with out the chicken all together, if you want this to be
meatless.

Maybe adding a little sour cream on top.
