Traditional breakfast meals include a lot of carbohydrate, such as cereal, toast, fruit, milk, etc. Some people with diabetes get by with these usual things for breakfast just fine, but others find that the blood sugars will spike too high after the meal. Including some protein and fat can blunt the effect of the carbohydrate foods and, make for better after meal blood sugars. Such proteins could include eggs, cheese, cottage cheese, peanut butter, avocados, a few nuts, lean meet. or even poultry or fish if that sounds good to you at breakfast time. Meal examples could include veggie omelette made with one or two eggs or egg substitute, cottage cheese, and fruit plus whole-grain toast, cottage cheese or ricotta cheese spread on toast, Greek yogurt with fruit and toast, peanut butter or almond butter on toast, oatmeal with peanut butter and a bit of fruit, a sandwich, toast spread with avocado and tomato. Multigrain breads generally cause less of a rise and blood sugar after the meal than those made from white flower. Greek yogurt is higher in protein and lower in carbs than regular yogurts and is very nutritious.There is no rule that says you have to have breakfast type food at breakfast time so you could even have a half sandwich and piece of fruit or cup of soup, or leftovers from dinner. there have been many times over the years that I have had to suddenly put together a quick unexpected meal and I usually revert to cheese, crackers, and fruit. I can easily assemble this, throw it in a backpack or purse, and be on my way in an instant.
