It's wise to avoid touch panels whether or not you can mark them.
Reason for that will become clear if your stove takes a lightning hit
and then none of the electrical components work on it any longer.
Fortunately we have a gas stove with an all electric the stove would be
a piece of junk by now.  This happened over here so it's not impossible.

The ovens usually beep each time you press the up and down arrows for the temp and adjust the temp in 5 degree increments accordingly.  It is totally manageable.  You will have a lot more options this way.
