there are plenty of them that have knobs or were when I got mine anyway.
They're simple, a timer and a thermostat. If doing something I need a
specific time on, I just set the timer for plenty long enough and then
set a timer on Alexa or what ever, and pull out the basket when time is
up and let the timer run itself down with nothing in it. If the basket's
not installed the heater won't run so it doesn't waste anything except a
little unnecessary timer clicking.

I think mine is an Oaster and I got it from Walmart for around $45. It's
small, but it's really fast, I can burn reheated french fries in just a
couple of minutes. I typically keep the temp all the way over to max. I
don't know what temp it even goes to or anything like that.
