OK, I use the Peloton, which I know someone has already mentioned. Let me try to address your questions below.
What equipment do you use? Now a days, many are touch screen. Also, if you had a flat pannel display, what did you label it with? Since I'm with sighted people at home, I'd label with clear tape. Probably the clear labeling tape from Independent living Aids.
As I said above, I use the Peloton. In particular the Bike+. It comes with a tablet mounted on the front of the bike which is running Android and Talk Back. I'm not sure what it cost me, but I'm sure it was around $2K.
So, what workout apps are user friendly and accessible?
The Peloton app on my iPhone and the tablet running Android and Talk Back are both accessible.
Do they track your progress such as saying you worked out on Tuesday and cycled 11 miles?
Yes
Do they enable you to track progress as you workout?
Yes
There are many bike workout apps for instance. Do all of them have live classes or are some on demand?
There are both live classes and recorded classes you can take on demand.
Is it possible to pay for the service from month to month, or do you have to commit for a half or whole year?
You can pay month to month. It costs about $40 per month.
Do they have music in them like classes you'd do at a gym?
Yes
What are the types of options on such fitness apps?
In addition to the riding classes, there are tons of other options. My wife helps me with some of the yoga poses since the descriptions on the videos aren't always clear. The meditation classes are great though. You can also use the Peloton app to start a outdoor walk or bike ride. There's also a just ride option, which I use when I want to pedal for a bit while listening to a basketball or football game. They also have a relatively new feature that ties into other streaming services you're subscribed to, like YouTube. I haven't tried this at all yet.

If you use a standard cardio piece of equipment, do you use any of the programmed workouts using sighted assistance? I think the downside to built in workouts is they have no instructor giving motivating prompts and no music.
Some of the classes have plenty of accessible instructions and motivational prompts, such as cycling and meditation. Others like yoga not so much. There's also music.
How diverse are the workouts?
The cycling workouts are very diverse including music rides, hills, interval, ..., plus there are other workout options, like yoga, meditation, outdoor cycling and walking, just riding, ...
Can you pick workouts for toning for instance or fat burning?
Yes
Can you pick a studio cycle class 30 minutes or less? As someone who is trying to be in shape, the hour long classes at the gyms are too long.
Yes, the classes have all durations, anywhere from five minutes to over an hour.

For my cardio exercise, I use the three main cardio devices at the gym when I've been to one. The devices are treadmills, bikes, and ellipticals.
I want to exercise more consistently and build up stamina in the new year.
I might incorporate some structured home workouts if my folks let me buy new equipment. We have a very old treadmill which does not even have a way to do inclines by pressing buttons and an old recumbent bike too.
Its showing its age so if I get a new piece of cardio equipment, I'd like some workouts to go with it.

My goals are to stay healthy, decrease blood pressure and cholesterol, decrease stress, and enjoy the impact of exercise. I might lose weight too although it depends on if I want to diet more. At least by increased fitness I can maintain my current weight.

>From what I've read online, Ifit seems to be the one of the most diverse and flexible apps because it loads on many devices and has workouts for many types of equipment.

If the app works with certain equipment, please specify what type of equipment it goes with. From what I've read iFit works with NordicTrack equipment.
