I don't know if you figured out yet how to change your iPhone settings back, 
but if you haven't, hopefully we can help.  What got changed on your phone 
was your rotor setting. The gesture to move the rotor is to have your thumb 
and your index fingertips on the screen of your phone as if you were 
manipulating a wheel.  I'm not sure how limited your fingers are with 
manipulating things like this so you might need some assistance to move the 
rotor to the speech rate option.  Once you are on the speech rate option you 
can swipe down with one finger and slow your speech down. Swipe down to slow 
it down or up to increase the speed.  Hopefully this was helpful.  Congrats 
on sticking with your phone. I really like mine and am writing this reply on 
it using a bluetooth keyboard. I think this might be a good option for you 
as well.  You can perform most or all of the gestures from the keyboard, 
even the rotor.
