Hey Rob,
Welcome to the journey, What’s your budget and how many inputs would you like? For accessibility your best bet will probably be an audio interface with the computer and a program like reaper. Standalone 4 track recorders aren’t that accessible as far as I know.
For no Frills, best bang for the buck I’d recommend the Behringer UCM202HD if you are fine with 2 inputs/Outputs, or the UCM404HD if you’d like 4ins/outs. The Audient Evo 4 (2in/out) and Evo 8 (4in/out) is another good inexpensive option.
Other options include the SSL 2 or SSL2+ or the MOTU M2 (2in/out) or M4 (4in/out).
