Hi Kathy,
I'll be looking into careers soon.  So wanted to follow up on your path. 
Did you find something in the health field?  Yes the visually impaired can 
do medical
transcription.  I think I read about in the braille monitor.
I don't know about accessible school courses.
Do you want to work hands on with patients?  I think you can be a nurse's 
assistant.  You can use your vision for some tasks.  Also they have talking 
machines that you could use like talking scales, blood pressure cuffs, and 
thermometers.

I'm not interested in that field but know its doable.  Hope you found 
something.
