Hi Ashley,

Yes, you can add people to skype calls and host conferences that way,
although you won't be able to do video if there is a large number of
people like you said.  However, as you are mainly talking anyway and
that's the most important thing then it's a pretty good option.
To do this just call a person you want to talk to, then go to the next
person you want to add to the call.  Once you find their name in your
contacts press applications and hit enter on invite to conference
call.  Skype will call them and they should be added once they answer.
 Do this to add each person to the call.
