I run into this issue with all of my math and science courses. It may take longer, but I write things out on the Perkins, then type them into my laptop or notetaker. If I remember right, you have an Apex. If you write in NEmeth on the Apex, it will not display properly as symbolic math. Those with the touch can write in Nemeth and have it display as linear symbolic math. I believe the BrailleSense also has this capability. When writing on a laptop, without the assistance of specialized math editing software, you can write linearly, using +, -, * and / for your equations. You can also use the caret for an exponent. This should be fairly readable by your instructor.
