You could certainly use the Outlook web interface to set up email forwarding. I haven’t done it in some time now but it should be accessible enough for you to enter your settings and get that done. I’m not sure your employer will be so happy about it though!
Otherwise the native Apple Mail app works beautifully with exchange accounts both on iOS and Mac. I use it all the time.
