Hello,
I also used text editor or Microsoft Word to take notes and complete assignments. I tended to use text editor for notes because it was a very simple interface and I did not need to format my notes. I switched between Pages and MS Word for creating assignments based on my needs. I did not use any blindness specific applications, but I did use some blindness related online resources like Bookstore.
