Well, I would tell them to keep her on tie down if it were my dog so she did not roam, no treats, and if she is getting excited, tell her to sit, or down, and I would acquaint them with the "rest" command if she is from The Seeing Eye. Of course you can teach her "stay" and they learn that pretty fast, but if you are going to use "rest", they may need to know this.
