Whenever someone asks if my dog bites, I usually say, “Only on [insert current day of the week]”. As for the “I didn’t even see your dog”, to me that’s the highest compliment I and my dog can be paid. If you didn’t see him, he’s doing a really good job of staying unobtrusively out of the way.
