I'll have to look there.
I've read Love in the Lead, but hadn't heard of any of these others.
I'm new to following this thread, so I'm not sure if this book was written by a Seeing Eye instructor, but Forward Together is definitely a good read if you want a look at how Guide training works from an instructors perspective.

I was able to find several older books  such as a friend in darkness, and  the working dog lectures that were  written in around 1930 or so. Found them on the internet archive. You have to sign up for  a print disabled access to get them. I don't remember all the titles, but there were quite a few about guide dogs in Germany and older books from 1800 about blindness.
It takes some digging, but there are lots of out of print books available.
