Oil of cloves is used to numb nerves and pack root canals. Think the cloves 
would act as a preservative and not let the thing rot.
It's amazing what appropriate use of herbs and spices will do. This has 
nothing to do with crafting, but when I was in college I shared an apartment 
with some girls and used to like to make weight watcher pizzas by toasting a 
slice of bread with tomato paste mixed with spice and garlic and sprinkling 
cheese and other toppings over the sauce.
I discovered that when I would open one of those little cans of tomato paste 
and use a tablespoon and put the rest in the fridge, the stuff in the fridge 
would get moldy in just 2 days -- i mean white and green so I could even see 
it...
I then decided to mix the garlic and oregano into the tomato paste, mostly 
to save time making my pizzas. And I discovered that not only did it not get 
moldy in 2 days, but it would last up to a month or more without any 
infestation.
I never did figure out if it was the garlic or the oregano that did the 
trick.
