Liz:

The three needle bind off is easy, once you get the gist of how it works. 
I'll look around or you can search since I've seen a number of directions on 
how to do it on the net.  In fact, sometimes, www.youtube.com has some good 
videos that do explain well many knitting techniques.

As for the crochet chain, all you have to do is make a long or in your case 
short chainwhich is done by placing one st on a hook, yarn over the hook 
then slip the second st in over the yarn over.  This makes 1 chain, so just 
keep repeating it until you think its big enough then just fasten the last 
st off.  Really I can't crochet well, but the chain is the easiest part.
