Do you have a pattern that you want to use?  If you do have one I can  
suggest 2 things.
 
1. is to research the yarn that is being asked to be used in the pattern  
and find out the yardage in that particular yarn.  Then  do some  
investigation on the yarns you might purchase and find out yardage and  compare  
yardage on pattern and the yarn you might buy and estimate from  there.
 
2. Go ahead and purchase one skein and make the one chair cover and even if 
 you paid full price you will know what you needed to complete one and buy 
the  rest on sale.
