[Nfb-krafters-korner] just figuring out crochet edgings on my own

Edgings can vary so much. I always use a single crochet all the way around one stitch per stitch on the item. If I see it is uneven...then I add more or less singles. I usually then make my edging after this row around and there are lots of combinations and putting multiple stitches in one stitch is definitely one of the choices.
