Something that I have found that works great is to put to tables of the same height up next to each other.  Use the straight line between the two tables as your cutting guide.

after making my measurements, I have used a hard back book for a straight edge to score card board with a  utility knife.
  just lay the book along the line and it is a good guide.  also, if the edge that you cut along looks a bit rough, you could cover the card board with contact paper/  adhesive shelf liner.

Hi, Kathy.
I like Ramona's idea too, and will keep some binder clips on hand--the clips with the ears you can flip up or down over the paper stack being held together.

Re cutting wrapping paper, how about using a letter opener? The little razor blade will get right to the crease, and it's a lot easier to manage than scissors.
