to change subject on a mac air: 
hit reply or fwd, then
shift control option up arrow
then arrow over to subject line to edit. 
No idea of how to do this on a I phone or I pad.  
Also replying to messages sent from I phones are difficult to \edit  subject
lines.
 - could be my lack of tecky no-ledge! lol
