I tie a loose knot, that can be, untied, later. Then start knitting with the
new strand of yarn.  When you get a large amount done, or at the end of your
project, untie the knot, cross the 2 pieces of yarn and weave in the tails.
Some, tell you to drop the old yarn and just start knitting with the new
yarn.  This works, too, but is a bit harder to get used to and keep tention
on your beginning stitches.
Make sure you cross the tails, before weaving in, in both methods.

I am knitting the scarf using bulky yarn and I need to begin using another
skein of yarn How do you change from one skein to another? I have tied the 2
ends together but that doesn't seem like a great idea with bulky yarn.
