Sonya, you can use acrylic yarn for pot holders.  You just want to be 
sure it is not such large stitches that your finger can get to the hot 
pan. You also do not want much stretch in the yarn.   I have some pot 
holders made of acrylic that work just fine. Someone gave them to me.   
I have not made that kind, but it can work if you really want to make 
pot holders.
