OCR means optical character recognition or the process of looking at a shape and saying "this is an O" or "this is a C because there is a break on the right side of what would otherwise be an O." There can be pages written on how OCR does what it does, but the bottom line is that it recognizes shapes as letters and types them in for us to read.
