Gene: I hope you know I was not being critical of you in any way.  I am quite aware the hotel had some major issues and most likely the sales manager you were dealing with had no clue how to do his job correctly.  I got the distinct impression the entire staff was rather confused and overworked.  I suspect you are correct about the sales manger not giving the updated counts and the main reason I brought it up was because it was quite embarrassing and annoying and something you certainly do not want guests to see is staff counting plates.  As for the ticket issue I was quite shocked you did not have someone take them at the door because lets face it once a meal is eaten if someone comes in without paying there is little proof and pretty much not anything you can do.  Keep in mind I am new to this and I have no idea how you guys do anything anymore so I am going to ask questions.   I am not trying to force anyone to change anything I just want to understand and because I have a bad case of diarrhea of the mouth and normally don't know when to shut up I am prone to laying it all out there and asking questions.  I honestly want to understand why things happen and what policies are and why.  I admit that because of my travel background I get extremely frustrated with hotels that do not do their jobs or that cause issues that need not happen.  I think you did everything you could and the blame for the shortages is squarely on the hotel sales manager.  I am not blaming  the staff they could only do what they were told.  The thing is unless they get an entire new management team I don't think you will ever have to worry about working with this guy again because I doubt it will be here in a few years.  Overall given everything I think things went incredibly well.  Unfortunately even if we paid top dollar at a five star hotel chances are there would still be issues.  Its the nature of the beast.
