[Nfbwv-talk] A Few Things

No, I wouldn't leave out the nuts and raisins. That takes the
fruit out and that's what it is, a fruitcake with jam in it.

Hi Sheri and Everyone:

I looked at the recipe for this and it sounds delicious.
Except, I hate nuts and raisins. Can you leave out the nuts and
raisins or maybe add something else in their place?
Or, do you have to use the nuts and raisins? Other than the nuts
and
raisins, it sounds delicious!
I did not eat any of it at the seminar because I found out there
was
raisins and nuts in it.

Thanks!
Kerri

 Debbi,

Please find below the recipe about which we have all been
talking:

 MARY's JAM CAKE

 by Mary Beaven

Mary Beaven reports that this cake is a favorite with her family
at
Christmas. In fact, as Dr. Jernigan writes in his article,
"Making Hay,"
in the March, 1993, issue of the Braille Monitor, in many places
in the
South the jam cake was the rural equivalent of the Christmas
fruit cake. It
 is moist and unforgettably delicious.

 Ingredients:

 One-half cup butter
 1 cup sugar
 One-fourth cup brown sugar
 4 eggs, separated
 2 cups seedless blackberry jam
 1 teaspoon vanilla
 One-half cup buttermilk
 2 cups all-purpose flour
 One-half teaspoon baking soda
 One-half teaspoon salt
 One-half teaspoon nutmeg
 1 -and one-half teaspoon cinnamon
 1 cup raisins
 1 cup pecans, broken

Method: Cream butter in electric mixer until soft. Gradually
add sugar, egg
 yolks, jam, and vanilla.

 Sift together dry ingredients.

Beat egg whites until stiff peaks form.

Alternately beat buttermilk and dry ingredients into butter
mixture.
Stir in raisins and nuts. Then gently fold in beaten egg
whites.

Bake in 3 9-inch round cake pans, which have been greased and
floured.
Bake at 325 degrees for 30 minutes. When layers are done, allow
to cool
slightly on racks before removing from pans.

When cake layers are completely cool, frost with the following
caramel
 frosting and stack:

Caramel Frosting: In heavy medium saucepan, melt 1 stick butter
or margarine
and add 1 cup brown sugar. Cook over low heat for 2 minutes.
Add one-fourth cup heavy cream and bring to boil, stirring
constantly.
Remove from heat and cool. Add 1 and three-fourths to 2 cups
powdered sugar
and 1 teaspoon vanilla. Beat with electric mixer until frosting
is of
 spreading consistency.

I'm cheering for your cake. Mine was kind of lop sided but I
plan to
try it again maybe for Easter. My frosting was perfect but my
layers,

 well, they need more work.

Best of luck with those egg whites. More than vision,
temperature and
timing are the keys. Looking forward to enjoying the cake.

 Best,

 Brad

 Greetings Federation Family,

We are nearing our leadership seminar weekend and I am eagerly
looking
forward to seeing all of you. I have just a few things I would
like
to take care of in one message and everything won't apply to
everyone
so please read down through the message and address what applies
to
 you.

There are still a couple of people who have not sent Marcus
their
money for the meals we are having catered at the seminar. If
you have
not talked with me or Marcus to make arrangements to pay when
you get
there, I will soon half to cancel your meals unless we hear
something.
If by chance people plan on not attending these catered meals,
it
would also be helpful to know this so we won't have to worry
about it
 any longer.

Again, if you wish to bring snacks for the Saturday evening
social
time, you are welcome to do so. This is not a requirement. For
those
who are bringing snacks, it would be helpful to know what people
are
planning on bringing. I will be supplying the paper products
such as
plates, napkins, forks, etc. Knowing what people plan on
bringing
will let me know if I need to get any other items such as bowls.

Sheri, the Harrison County Chapter is in charge of nametags and
the
registration table for convention this year. Please bring with
you
the name tags and any extra supplies that Barb had.

Ed, can you do the Braille agendas for the board meeting?

Karen, were you able to get the print agendas sent to Glen and
Mary
 Fish?

Just to remind chapter presidents and board representatives, if
your
chapter wishes to donate a door prize for national convention,
please
bring it with you if at all possible.

If any of you reading this message have members who are not on
this
list, please be sure to share it with them.

Please do not hesitate to contact me if you have any questions
or need
 additional information.

 Charlene
