To add to these suggestions, Openbook is another OCR solution from Freedom Scientific. Abby Fine Reader is another, far less expensive option because it is made for mainstream use. The Mac version of Abby is accessible. I have not used the Windows version.
Through your school system, you may already have access to the full version of Adobe. Newer versions of Adobe are supposed to have an OCR function so that you can turned a scanned image into a pdf with text. I have not tried it to see if it works well with JAWS, but I would imagine that it does.
No matter what, you’ll need some OCR software to convert the scanned images into text.
