Hi Kathy,
A couple of options come to mind.
First, after you paste, you should be able to convert the table to text in Word. If you are using Word 2016 or later, you can hit Alt+Q to search the menus and start typing convert table to text. When you hit Enter on this command, it opens a dialog that asks you how you want to separate the cells from the table. The default is Tabs but you can change it to whatever you want using the "Other" option.
If you don't like using the menu search or are using an earlier version, you can also find this command in the ribbon. It shows up in the special "Layout" ribbon that appears when you put the cursor in a table. The shortcut keys that JAWS reads me are Alt +J, L, V.
You can also change what JAWS copies and pastes from a program. From your Google Sheet, press JAWS key + V to pull up quick settings, type "select" in the search box, and arrow down to "Select and copy." This should be set to "From Virtual Cursor," if you do not want it to bring any of the formatting. This works nicely if you do not wish to preserve invisible formatting tables that sometimes get copied from web pages or when you use JAWS OCR. I have no idea if it will work with Google Sheets since the table is part of the actual information and not just an underlying formatting feature. It could be worth a try though.

I have converted from Window Eyes to Jaws. I’m actually doing better than I thought I would after using WE for several decades, but I have a particular action I need to take with some data that has shown me Jaws does not behave the same way Window Eyes did. Explanation below.
The new teachers I support in half of my hybrid job are being listed with their school and subject on a Google sheet. Last year, I selected all of each teachers information in the row of that sheet, pasted it into a word doc, and rearranged it. Window Eyes allowed me to do that without a problem; it did not carry over any table features in the pasting, just some extra tabs that I could easily delete. However, when trying it with Jaws, the pasting retained the table format, and I could not figure out how to get rid of that table format. I could not manipulate the info. Four instance, the Google sheet has last name in one cell and first name in the next cell; even when pasted into the word doc, I could not figure out how to maneuver that information with any copy/paste attempt.
If anyone has any clue what I am saying, please help! I doubt this email will rank among my most articulate messages!
