Just try it and see how it goes. If you want your transcriber to transcribe an entire book it is definitely doable. It'll just take time. Another thought I had is trying to put so much emphasis on the blindness. I used to do that too and it only got in the way of The things I wanted to do. If he's not open I'm out your blindness and willing to work with you, that's his problem and he's not the right teacher for you. For me, I say something like I just want to make you aware that I'm blind and then I leave it at that. It's a personal decision. Some people choose to just show up at the lesson. Some people choose to make the teacher aware ahead of time. Whether an online list would work, again that's an individual decision between you and the teacher. You'll just have to try it and see how it goes.Good luck.
