Hi Jamie, I was going to suggest Amazon, but, I am one that likes to see and feel the product before buying it.

A mandolin slicer will make matchsticks…like 1/8-inch julienne. It’s a good tool but I’m always very careful with it. Before you know it your fingers are dangerously close to that blade and you must use the hand guard. I got mine at the store but I have seen them in the blindness product catalogs so not sure if the ones sold there have any additional safety features.
