Personally, that's a lot of simple carbs for dinner, and the coffee? Unless you're running down before lunch, I think I would leave the drink for breakfast, I didn't calculate it out but it looks like a good mix of simple and complex carbs, proteins and good fats (depending on your peanut butter). Sounds kind of gross, but try a packet of instant oatmeal (uncooked, be sure to add a little more almond milk)... really sticks to you and adds more complex carbs. Perhaps ice cubes or even frozen bananas for that frozen delight. Years ago I did milk, powdered milk (more proteins), bananas, ice cream, instant oatmeal, and a couple "weight gain" powders no longer legal for sale in many states... I know, the banana milkshake part sounds truly dessert, but it's actually a complete amino acid concoction.
