Hello Kris,

I've found zumba classes hard to follow. I never had the nerve to try it but 
I've observed it and its fast pace.
I have some vision so I was able to see some of what they were doing and by 
hearing their feet move and the music rhythyms I know its generally fast.

In my opinion, zumba is not a class easily followed by us; same goes for 
jazzercise.
To participate, you'd need the instructor to show you the moves before class 
and come up with verbal cues you understand. I spoke to a zumba instructor 
at my gym who informed me many of the moves do not have names. She was 
willing to help, but given the complexity of the dances, I did not feel I'd 
be able to catch on with only a little instruction before class.

Note that zumba is usually a nonverbal class. Most aerobics classes have 
names and instructions the instructor calls out such as grapevine or shuffle 
if you are in an aerobics class. But not zumba. Its rather silent! So you'd 
have to work out something with the instructor.
Another idea is to bring an assistant to the class or find an exercise buddy 
in class who can help. You may not get much shown to you in class due to the 
pace, but if you had a partner, they could describe it and show you the 
moves after class. Also, zumba moves are based on latin and Spanish dancing, 
so if you have a dance background, this will aid in you picking up moves.
