Stephen,
I hear you, about thunderbird.  I know there trying to spin out the open
source as a seperate project likely another non-profit. Its a tough
call, the past 15 years or so shows that Microsoft's default mail client
dies and is reborn for almost every operating system version... As long
as the navigation and keyboard shortcuts remain somewhat similar, I
don't think it creates a huge learning curve every 4 to 5 years. Then
there's the philosophical argument Microsoft periodically treating a11y
users like pond-scum.  I don't know. I mean IMAP and POP ain't changing
anytime soon; an theoretically Thunderbird shouldn't need many
updates... I hope it survives, at least as a power user.  I'd say if it
there just a basic user, then Mail will probably work fine.
