I would say that I don't think people are taking advantage of how easy and readily available OCR solutions have become.
On a related note, I often still hear people complaining about how PDFs are not accessible, which simply isn't true.

I couldn't say if this is an under-utilized feature but I'm wondering if the Text Analyzer feature from JAWS is being used to its fullest potential. I will admit that NVDA has become my screen reader of choice and is what I use, pretty much exclusively, at home. However, if I found myself needing to type professional documents with very specific formatting requirements I would likely use JAWS for this purpose because of its text analyzer feature.
