If you have an iPhone I have found that scanning an entire book with the voice dream scanner using an iPhone stand is much more accurate and cheaper then any of the other AT oriented devices.

The built-in OCR that is preinstalled with JAWS is not bad but there is no way to customize the OCR or the presentation with the exception of specifying OCR languages.
The Pearl camera definitely has its pros and cons. I wrote a detailed blog post<https://davidgoldfield.wordpress.com/2021/08/15/my-thoughts-on-the-pearl-scanning-and-reading-camera-from-freedom-scientific/> about this camera as I purchased it last summer.
OpenBook is customizable but it's no longer being developed and parts of the software have never been modernized. I provided my own feedback about OpenBook in the above mentioned blog post
There are modern OCR packages for Windows but I haven't had an opportunity to try them.
