Yes, I also use my finger on their hand to teach gestures, especially to emphasize how small and light of a move the gestures are. Aside from the going home issues, I’ve also have moved away from saying swipe, I always introduce it that way, but describe it as a flick as in when we’re swiping left or right and for Home I tell them to push up the screen and that seems to register a bit more.
Interesting enough, as I was reading your messages and trying out some of the method syou all use for myself to see if I think it might work with our clients, I realized that you no longer have to position your finger from the middle of the screen for the Home gesture. I am able to do it from any point from edge to edge or corner to corner that is along the bottom edge. I am using an iPhone 12 Pro Max running 17.6.1. . That is also the case for the notification center and control center, which at this point I don’t even remember if we had to do it from the middle or not, but you can pull it down from any point across the top edge.

Yeah Apple does the same thing when you go into the store for training with one of their accessibility specialists. I've found that the iPad is much more forgiving with this gesture than the phone; if you don't get it exactly right, the iPad will still recognize it whas the phone's margin of error is pretty narrow.
